Vanilla Cheesecake Recipe

This vanilla cheesecake recipe is delicious, I always make it for big occasions and it goes down really well!

Ingredients

180g digestive biscuits, crushed into fine crumbs
75g butter, melted
500g full fat cream cheese (Philadelphia is good)
100g icing sugar
200ml double cream
1 tsp of vanilla essence

Method

1. Grease and line a deep, round cake tin.
2. Add melted butter and digestive biscuit crumbs together and mix thoroughly.
3. Place butter and biscuit mixture into prepared tin, sugar together pressing down firmly and evenly, until flat. Place in the refrigerator until set (about 30 mins).
4. Beat cream cheese and icing sugar together until well mixed.
5. Add vanilla essence and carefully fold in double cream. (Do not add cream all at once).
6. Empty mixture into cake tin, spreading evenly, and set in the fridge for about an hour.
7. Top with fruit and cut into slices before serving. Enjoy!

    I made this yesterday, amazing recipe and really easy/quick!
    I didn’t whip the cream before hand, but made sure i added it really slowly, worked perfect.
    I think next time i make it i will use more biscuits for the base.

    Made it today came out amazing! I used choc chip cookies for the base, turned out much better and added melted chocolate for the filling. :)

    Hello,
    Well this looks easy, so i decided to make it, i just finished but to be honest it still smells very strongly of cheese which is really putting me off (maybe this one is supposed to but in the past ones ive eaten dont smell of cheese atall) Anyway i will put crushed honeycomb on top tomorrow :) It WILL taste nice or i will kill it :)
    (I am also leaving it to set overnight so i can make sure it will be the right consistency)

    I just want to ask (or anyone who made this sucessfully) that how “liquid” is your filling when you pour it on the base?

    I tried to make it, and it seems to be so liquid, like water that it doesnt set

    Is yours suppose to be very thick that you end up spreading it and pressing it down even to the base? Or fairly liquid so you can wingle around and it will even itself out? Or something in between?

    Needless to say, mine eventually set after like 24 hour and it taste horrible

    HELP
    each time I mix icing sugar to cream cheese for toppings or cheese cake it turns into a liquid. what am I doing wrong as the comments for this recipe don’t mention this. Last time I made a topping for a carrot cake using above ingredients I had to freeze the topping to get it spreadable but it ended up melting and runny again.
    What am I doing wrong.

    I finally made it
    I used 150g of philly and 50mil double cream, it makes a thick paste and just set it in fridge

    I’ve tried this recipe before… And i’m convinced I forgot to put the icing sugar in… However, it worked like a dream. Recipe was very easy to follow, and it was shockingly easy to do. However, One thing I would add would be an additional half teaspoon of vanilla extract, and two make sure you are using stuff with vanilla seeds.
    Strawberries go great with this, but strawberry coulis half marbled into the very top layer would make this…
    But all the same, beautiful cheesecake.

    Going to make this today made cheesecakes before with recipes that did not include icing sugar, whats the point? it was actual CHEESEcake. this sound so nice and by the comments must taste nice, and this recipe seems the easiest one that ive read so far :)

    I’m waiting for it to set now, I don’t think I’ve ever properly made a cake, I certainly havn’t made a Cheesecake before. This recipe is so easy, the only things I had to inquire about were greasing lining and to sugar. And to anyone as unskilled as me they just mean.

    Put down some grease proof paper -lining
    Grease it with oil by using kitchen roll I used vegetable oil- Grease
    I think this just meant sprinkle, I dealt with it like it was sand.

    P.S again if you’re as stupid as me don’t use a massive whisk to deal with the icing sugar and cream cheese.

    Made this quite a few times after discovering it. Made a few twists eg, making my own choc chip cookies to use for the base and adding lemon curd to the mixture to make a lemon cheesecake.
    This recipe is an easily adaptable one, that can suit any occasion or taste.
