Vanilla Cheesecake Recipe

This vanilla cheesecake recipe is delicious, I always make it for big occasions and it goes down really well!

Ingredients

180g digestive biscuits, crushed into fine crumbs
75g butter, melted
500g full fat cream cheese (Philadelphia is good)
100g icing sugar
200ml double cream
1 tsp of vanilla essence

Method

1. Grease and line a deep, round cake tin.
2. Add melted butter and digestive biscuit crumbs together and mix thoroughly.
3. Place butter and biscuit mixture into prepared tin, sugar together pressing down firmly and evenly, until flat. Place in the refrigerator until set (about 30 mins).
4. Beat cream cheese and icing sugar together until well mixed.
5. Add vanilla essence and carefully fold in double cream. (Do not add cream all at once).
6. Empty mixture into cake tin, spreading evenly, and set in the fridge for about an hour.
7. Top with fruit and cut into slices before serving. Enjoy!

    Firstly to the person higher up the list… you don’t bake it. There are two types of cheesecake, baked and unbaked, this is unbaked. If you heated it it would melt away. Just made this recipie. Is very similar to numerous others but being so plain is perfect for creatives…. I made a chocolate biscuit base by adding nutella chocolate spread to the butter, I mixed fudge pieces into the filling and topped with caramel sauce and crumbled flakes. I think people who ate turning up with liquid cheesecake are either adding the cream too fast or using inferior cheese….. never use cheap cheese you increase the risk of it being shite

    Have an American friend who posted that they had made an Oreo cheesecake about a month back and since have wanted to try one. After looking through loads of recipes all telling me to cook eugh, I decided to search for vanilla cheesecake and adapt. This cheesecake was delicious a lot quicker and less work than others.

    To make oreo i changed the biscuit base for orea, scrapped the filling off and added to the main mix. I accidently only brought 400g of philly for the main mix but the added cream from the oreos meant it was no problem still finished yummy.

    Oh and i used the same weight in biscuits which was around 24 orea biscuits.

    For those above questions. No the mixture should not be runny when adding to base should be thick and fluffy like whipped cream so it sits nicely on top and just about spreadable. Either as mentioned above, bad cream cheese, double cream wasn’t whipped before hand, or the joining of the two was rushed, you have to make sure you fold slowly otherwise you knock the air out and its not as good

    Made it and OMG AMAZING!!!

    Best cheesecake ever, and I have eaten a lot of different cheesecakes and I always get expensive ones!!

    I use vanilla paste instead of extract as it cheaper then beans but you can still see all the vanilla! NEVER USE ESSENCE! gross

    I’ll be trying different biscuits for the base each time I make it! I been told to try hobnobs and even mars bars!

    I now shared this recipe with my dad and he will be topping his with home grown homemade blackberriy syrup and home grown blackberries!

    Flavoured mine with dessicated coconut and topped with raspberry jam. Absolute winner recipe for simpleness, though I wish it had said that the cream needed to be whipped! I’ll soon be loving this up when I take it for a packlunch desert to work tmoz!

    Absolutely LOVE this recipe. Everyones asking for it, great clear instructions, also. Topped with rasberrys, and Ive added some white chocolate once or twice, but the first time I put in too much and it failed, though the second was perfect! Brill, I have it when someones over, or I just make one for myself and feast on it! Yum.

    Heyy, Im 13..Im very interested in cooking…Ive made this Cheesecake 6 times today the 7th…and i must say its came out PERFECT every single time …And i must recommend this recipe to everyone…Everytime i make this recipe for my family they always wont more slices….Me I Never really liked chessecake..But this one is delisios!!!Thanks For Sharing!.

    I recommend this recipe, Ive made it for my family about 5 times and everytime they say its perfect, Just recormend putting another half a teaspoon of vanilla!!

    I made this and it was very yummy but the base came away from the cheese/cream mixture when serving. Any tips on making the two stick better? Should I sprinkle sugar on top of the base before adding the cream?
