
Fabulous tasting and very easy to make! These stuffed peppers will make you very popular with whoever you serve them to.
Ingredients
4 peppers, red or green
3 tbsp olive oil
100g chopped bacon
100g chopped shallots
1 chopped garlic clove
2 chopped tomatoes
50g cooked Camargue red rice
3 tbsp chopped parsley
1 tsp chilli powder
salt and pepper
100g grated mature Cheddar Cheese
100ml hot vegetable stock
Method

These need to be cooked for a lot longer than 30 minutes, in the centre of the oven they need at least an hour.
THESE PEPPERS WERE AWSEM THEY WERE THE NICEST THING EVER I MUST DO THEM AGAIN
These were delicious but the peppers were not cooked. I will do the recipe again but bake the peppers for abt 10 mins before stuffing.
