Spicy Grilled Mackerel Recipe

Mackerel is one of those fish which seems to be fine with everything, they are very hardy so don’t be afraid to cut, slash and coat them in anything you fancy before you chuck them onto the grill.

Ingredients

4 mackerel, about 300g/10oz each
2tbsp Thai red-curry paste
Sea salt and pepper
1tsp sugar
1 cucumber, peeled
12 cherry tomatoes, halved
2tbsp coconut milk
2tbsp mint leaves
A dash of lime juice
A dash of Thai fish sauce
1 lime, quartered

Method

1. wash the fish under a running tap dry. Slash the thickest part of the Mackerel flesh on both sides 3-4 times.

2. Mix the sugar, sea salt, pepper and coconut milk together and then stir the curry paste into this. Spread half the mix over one side of the mackerel.

3. Place under the grill for 5 minutes. Next, turn the fish over and coat the other side of the mackerel with curry paste the fish and grill fora further 10 minutes, the skin of the fish should start to crackle.

4. Finely slice the cucumber, toss with the tomatoes, mint, fish sauce and the lime juice. Serve the grilled mackerel with the cucumber salad and lime wedges
