Salmon & Fresh Tomato Sauce Recipe
Ingredients
2 Salmon Fillets (140g each)
Olive Oil – 2 tbsp
2 Small chopped onions
2 Juiced Lemons
2 skinned and chopped tomatoes
Mixed Salad
Balsamic Vinegar
Method
1. Heat up a griddle pan
2. Score the salmon on the skin, then rub half of the oil into both sides of it.
3. Place salmon on the pan and cook for 2-3 minutes.
4. Whilst cooking this preheat a saucepan.
5. Turn the fish over and cook for another 2-3 minutes.
6. in the saucepan take the rest of the oil, cook the onions until soft, add the tomatoes for 2-3 mins. Add salt and pepper and a dash of balsamic vinegar.
7. Serve the salmon on top of the sauce and add a side order of the mixed salad.
Serves: 2
Preparation time: 15 mins
Cooking time: 10 mins

Looks like a great recipe, I think i will be trying this one out at the weekend – just have to find a nice piece of salmon now!
