Salmon Pie Recipe

 

Interesting recipe for salmon pie using corn flakes

Ingredients

1 1/2 cups Corn Flake Crumbs
3 tablespoons grated Parmesan cheese (optional)
110g butter or margarine, melted
15g butter or margarine, extra
1 small onion, chopped
1/2 green pepper, diced
1/2 cup chopped celery
220g can salmon, drained
3/4 cup evaporated milk
2 eggs
2 teaspoons prepared French mustard
1 tablespoon lemon juice
pepper, to taste
1 teaspoon coarsely chopped fresh oregano

Method

Preheat oven to 180°C.
Combine first 3 ingredients and press firmly into 23cm pie plate.
Refrigerate for 30 minutes.
Bake in a moderate oven (180°C) for 10 minutes.
Melt extra butter.
Sauté onion, green pepper and celery until tender.
Spread vegetables over pie base.
Flake salmon and spread evenly over vegetables.
Combine thoroughly evaporated milk, eggs, mustard, lemon juice and season to taste.
Pour into pie shell.
Sprinkle with oregano and bake in a moderate oven (180°C) for 35 minutes.
Serve with steamed carrots, zucchini and broccoli.
