Rock Cakes Recipe

 


Rock cakes are great, they remind me of the easy days of childhood! Take a look a this great rock cakes recipe and step back in time!

Ingredients

200g Sultanas or raisins
100g Margarine
75g brown sugar
200g Self raising flour
1 Egg

Method

1. Heat up the oven to 200°C.

2. Rub margarine and the flour into a mixing bowl. Repeat this until the mixture looks like breadcrumbs.

4. Mix in the rest of the ingredients in one go.

5. Line a baking tray with greaseproof paper.

6. take the mixture and make a number of small balls, around 5cm in diameter and place these on the baking tray.

7. Bake for up to 25 min. To make sure the mixture is cooked, push a skewer into the middle of the cake, if it comes up with no dough stuck to it then it is ready!

8. Allow to cool until hard, then serve.

Serves: 6
Preparation time: 10 mins
Cooking time: 25 mins

    These cakes bring back so delicous memories of my childhood. Easy, tasty, and totally moreish. Give a liberal sprinkling of caster sugar for the perfect finish before baking.

    This recipe is so easy most houshold have the ingredintds in there cupord. I didn’t hve any raisins so i used hot chocolate drinking powder. It was nice and chocolatey.

    they were reaaaaalllllyyyyy yummy cuz we made them in school but then miss licked mine :( so i couldn’t eat one of them but apart from that they were really yummy !

    Just like someone here said it is a little dry.
    I tried making it but it was too dry to roll into a dough so I addedd about half a small cup of milk and I am baking it yum and I don’t like sultanas that much so I added cooking chocolate chips and sunflower seeds instead! It smells very nice!!!

    can you use white sugar instead off brown as i live
    in turkey and can not get brown sugar

    Very delicious.
    Also… if you are not allergic to nuts reduce the sugar by 25g and use 25g of ground almonds instead….still delicious.
