Ratatouille Recipe

 


I normally make a lot and freeze in portions – good with BBQs.

Ingredients

2 onions
10 cloves garlic
3 tbsp. Olive oil
3 tomatoes, skinned and chopped
Large tin tomatoes
2 courgettes, 2 red/green peppers, 1 aubergine, 1 potato, 2 carrots (or you can mix other vegetables in, like green beans, etc)
1 chicken stock cube
Half litre water
Seasoning

Method

Fry onions and garlic in oil gently for few minutes.
Add tomatoes, and tin of tomatoes.
Then add all vegetables, chopped into small pieces.
Add crumbled stock cube in water and seasoning.
Simmer gently for about three quarters of an hour.

Serves:
Preparation time: 10 mins
Cooking time: 50 mins
