Chocolate oat cookies with coffee topping. Easy recipe makes a big batch loved by all the family.

Ingredients
8 oz. cooking margarine
8 oz. sugar
8 oz. self-raising flour
5 oz. porridge oats
2 oz. Cocoa
Icing:
2 oz. cooking margarine
1 tsp. coffee dissolved in water
8 oz. icing sugar
Method
Prepare oven 350F gas mark 4. Lightly grease 13″ x 9″ tin. Put margarine into a large pan, heat gently until melted, stir in sugar, flour, oats and cocoa, and mix well. Press into prepared tin. Bake in centre of the oven for exactly 15 minute Cool in tin.
For icing, melt margarine in a pan with coffee. Sift icing sugar into a bowl. Add all melted ingredients and beat well. Spread icing on the biscuit. Allow to set. Cut into squares and remove from the tin.

This is the most yummy traybake ever! My mum always cuts it into really big pieces and we fight over who gets the biggest one!
My mum always made this too – and I still make it now for my own family – it’s a great recipe. Sometimes I make it for the children with melted chocolate on the top instead of the coffee icing.
It travels well and is great for picnics and days out.
