Mexican Stir Fry Recipe

Quick and easy to make, plus it adds a little Mexican flare to an otherwise normal stir fry!

Ingredients

450g (1lb) lamb strips
60ml (4 tbsp) tomato ketchup
30ml (2 tbsp) chilli sauce
20ml (4 tsp) lime juice
15ml (1 tbsp) fresh mint, chopped
Mixed salad leaves
pinch chilli powder
225g (8oz) cooked pasta shapes
Juice of half a lime
Salt and freshly ground black pepperLime wedges for decoration

Method

In a large non-stick wok or saucepan, dry-fry meat until browned.

Add the remaining ingredients and cook for 1-2 minutes.

Stir the meat into a mixed salad with a little chilli powder, cooked pasta, lime juice and season. Garnish with fresh lime wedges.

Preparation time: 10 mins
Cooking time: 20 mins
