Grilled red snapper with lemon and herbs couscous recipe

Very quick, very easy and very tasty too.

Ingredients

2 whole red snappers, cleaned, scaled and fins removed
parsley
A bunch of spring onions
300g of couscous
3 lemons
Olive oil
2 cloves of garlic
Salt and pepper

Method

To make the marinade, trimmed and finely chopped 3 spring onions and two tablespoons of parsley.

With a pinch of salt crush the garlic and mix together the spring onions, parsley, 2 tablespoon of olive oil and a juice of 1 lemon put the fish in the marinade and coat all over and as well as inside the fish.

Cook the fish under a very hot grill for about 12-15 minutes.

Meanwhile cook the couscous according to the instruction on the packet and chop the rest of the spring onions and 2 tablespoons of parsley. Mix the herbs and the couscous together adding a little bit of oil and squeeze of lemon juice.
