Greek Lamb Skewers Recipe

Great, simple recipe for lamb skewers – as a tip, make sure you soak the skewers in water to stop them burning!
Ingredients
2 cups cooked rice
8 lamb skewers (600g diced lamb threaded onto a skewer)
2 tblspn vegetable oil
1 tspn dried oregano
salt and pepper to taste
1 x 200g tub Tzatziki dip
Spanish Onion
Method
1. Pour oil into a flat dish or plate, sprinkle with oregano, salt and pepper.
2. Roll skewers in the seasoned oil.
3. Place onto a barbeque or hot plate and cook to your liking.
4. Serve on the bed of rice, garnished with onion and top with tzatziki.
