Gingerbread Men Recipe
A simple, yet tasty recipe involving oats.They last for days, they are cheap to make and they are good for you. What could be better than a great Gingerbread Men for that lunchtime snack!
Ingredients
(Makes 24 x 8-9cm (3.5ins) people)
350g (12oz) Doves Farm self-raising flour
3 tsp ground ginger
1/2 tsp ground mixed spice
115g (4oz) golden syrup
55g (2oz) butter
25g (1oz) soft brown sugar
1 large free-range egg, beaten
48 currants
Method
Sift the flour, ginger and mixed spice together. Melt the syrup, butter and brown sugar in a saucepan until liquid. Allow to cool slightly and add to the dry ingredients, together with the egg. Mix well to form a dough and roll out fairly thinly. Cut into shapes and press two currants into the figure to represent eyes. Place on a baking sheet.
Bake on the oven grid shelf set on the floor of the roasting oven with the cold plain shelf on the second runners down for 8-9 minutes, until golden.
Cook in the baking oven on the oven grid shelf, placed on the lowest set of runners for about 9-10 minutes, until golden.
Conventional cooking
Bake at 180C (350F), fan oven 160C or gas mark 4 for about 8-10 minutes, until golden.

I love gingerbread men but how can they possibly be “good for you” – they contain sugar, butter and golden syrup!!
I substituted the syrup for ginger jam. If you like ginger – that’s your biscuit!!!
definately not the best ginger bread recipe, way too crumbly and the indicated amount of flour was way too much.

Brilliant, easy to make. Added a couple of drops of vanilla essence to the dough which made it a easier to roll out.
My flatmate and I excitedly made our first batch of ginger bread biscuits tonight, and whilst I won’t claim to have produced a culinary masterpiece, to my mind the results were a triumph! They tsste alright, but we found that the key to success is in the decoration. We are particularly proud of our gingerbread priate and would urge other biscuit bakers to do the same. If you like gingerbread and you like pirates, then this is most certainly your biscuit! Enjoy me hartys!
After much deliberation I liken this recipe to a bottle of Lambrini, although it doesn’t taste that great it’s cheap, easy and a lot of fun!
