A really simple and easy Spinach Lasagna Recipe – something tasty for all the family.
1 clove crushed garlic
2 tins chopped tomatoes
Tbsp of tomato puree
Salt & pepper
Basil, Oregano and Thyme
500g fresh spinach
1 large tub cottage cheese
40g chedder plus more for the topping
1/2 tsp nutmeg
1. Fry up the onion and garlic until soft, add the tomatoes and puree. Season well and add in the herbs, simmer for 5 mins.
2. Chop the washed spinach roughly. Add the spinach to the cottage and cheddar cheeses and grate the nutmeg over the top. Season with salt and pepper.
3. Put a layer of the tomato sauce at the bottom of a casserole dish, then a layer of lasagne sheets then a layer of the cheese/spinach mixture. Carry on with this method until you have run out of both mixtures
4. Add grated chedder cheese to the top of the lasagna then put it in the oven at 180 degrees for 30-40 mins.
