Yummy Drizzle Cake

Ingredients

4 large eggs

225g sugar

225g butter or margarine

grated zest of 2 lemons

225g self-raising flour

2tbs of milk

For the lemon syrup:

200g icing sugar

the juice of 2 lemons

Method

1. cream the butter and sugar together, mix the flour in and make sure there is no air.

2. add the zest and mix.

3. and to a standard loaf tin which is lined in grease paper.

4. add to an oven gas mark 6 for 40 min (know when done because a knife poked in the middle will come out clean).

5.when cake warm prick the cake and poor the syrup. leave to set, then remove from tin and serve.

WHY NOT TRY ORANGE ZEST, DO HALF AND HALF OF LEMON AND ORANGE ZEST OR EVEN FOR THE SYRUP FOR A SIMPLE TWIST!!!
