The recipe was developed to accommodate my love of sweet healthy snacks and being allergic to dairy products.

Ingredients

75g Soya Butter (Available from Tescos)
75g Demerara Sugar
2tbsp Golden Syrup (Rub the spoon with a tiny bit of oil and the golden syrup
runs off no worries!)
1tsp Cinammon
Pinch Nutmeg
1 cup Choc Chips
1 cup raisins
1/2 cup descicated coconut
and last but not least 150g Porridge Oats

Method

1. Melt butter, sugar and golden syrup over low heat in a saucepan. Wait
until most of the sugar dissolves before adding any dry ingredients.
2. Add spices, constantly stirring
3. Add oats gradually, until all is mixed in properly.
4. Add Choc Chips, raisins, coconut.
5. Empty into a greased baking sheet and spread layer out.
6. Bake at 170deg for about 20 mins.
7. Cut into bars before they are cooled.
8. Enjoy without the guilt!
