Nothing better as a Winter warmer than a great cottage pie recipe, a true British great! The cottage pie recipe below is a fairly easy variant. Have a look through some of the comments and you will see extra ways to spice it up second time around if you want to.
Ingredients
1 onion, finely chopped
1 clove garlic, crushed
500g (1lb 2oz) Lean Beef or Lamb Mince
10ml (2 tsp) tomato purée
1 x 400g can tomatoes
1 beef stock cube
10ml (2 tsp) Worcestershire sauce
Salt and freshly ground black pepper
600g (1lb 5oz) potatoes, peeled and halved
25g (1oz) Creamery Butter
15ml (1 tbsp) Fresh Whole Milk
1 leek, finely sliced and blanched for 2 minutes
50g (1 3/4oz) Cheddar cheese
butter for dotting
Method
1. Heat the oil in a large heavy-based saucepan. Add the onion and garlic and cook until soft. Add the meat and allow to brown.
2. Add the purée, tomatoes, stock cube and the Worcestershire sauce. Season to taste with salt and freshly ground black pepper then cook on a slow heat for about 20 minutes.
3. Pre-heat the oven to 180°C (350°F) Gas Mark
4. Meanwhile, cook potatoes in boiling salted water until soft. Drain and mash with the butter and milk until smooth and creamy. Place the meat in a large ovenproof dish. Top with the blanched leek and grated Cheddar cheese.
5. Finish with the mashed potato. Fork over and dot with a little butter.
6. Place in the pre-heated oven for 20 minutes.
7. Remove from the oven and place under a hot grill for about 3 minutes until brown and crispy.

I followed the recipe up to the topping ..I personally feel it is the potato that lacks flavour ..so I blanched the leek boiled some swede with the potato mashed all three together cover the cooked mince then grated cheese over the top …as of yet I have only had positive comments ..should you try this way I hope you enjoy it ….Jon
I also changed the topping by adding some finely chopped spring onions blanched in milk then added to the potato ….lovely coloring to the pie and flavour to the potatoes YUMMY!!
