Brings back memories from school. I found this banana bread recipe the other day from an old cookbook and it was delicious.
Ingredients
250g plain (all-purpose) flour
2 teaspoons baking powder
125g (4 1/2 oz) unsalted butter, softened
4 ripe bananas, mashed
2 eggs, lightly beaten
1 teaspoon vanilla extract
250g caster (superfine) sugar
175g good-quality dark or milk chocolate chips
Method
1. Heat the oven to 180°C (350°F). In a large bowl sift the baking powder and flour.
2. Using another bowl, Mix together the butter, sugar, banana, eggs, vanilla extract and choccy chips in. Add to the dry ingredients and stir well but be careful that you don’t over mix.
3. Pour the bread batter into a non-stick 19 x 11 cm loaf tin and bake in the oven for around 1 hr 15 mins.
4. Leave the bread to cool in the tin for around 5 mins. Then leave on a wire rack to cool further. Serve with butter.
Serves: 8
Preparation time: 20 mins
Cooking time: 15 mins

Just made this – I increased the recipe amounts because my tin is bigger than recommended – but it has taken an age to cook, probably about 1.5 hours – and that’s a fan oven. Had to put foil over the top about half an hour in because it was starting to brown too quickly. Think it may be better on a lower heat, with foil on from the start and then increase the temp at the end.
Just have to wait for it to be cool enought to try now!
