Carrot and Coriander Soup Recipe
Ingredients
1 large onion , diced.
Clove of Garlic chopped finely
3 Large Carrots or 4 medium Peeled and sliced
2 potatoes peeled and chopped
1 litre of veg stock or try to use veg Bouillon.
Large handful of fresh coriander, washed and chopped,
Salt and Pepper
Method
Gently Fry onions and cover to sweat.
when soft add the garlic and cover again for 2 mins.
Then Add the carrots and potatoes along with the stock, cover and bring to the boil.
Add the coriander and season with salt and pepper.
Leave to simmer for about half an hour or more until the carrots and potatoes are soft.
Use a hand blender or conventional one to blend into a thick soup choosing the consistency you like.
Eat with lovely fresh bread and butter mmmm!!

Cooking time: 30 mins

i made this recipe and it was really nice. the only thing i did was add a bit less stock and a bit of milk to make it creamy, plus to make it thicker i made a roux and added it near the end of the cooking.
What a wonderful recipe! I made this as a starter for a surprise meal for my boyfriend and he couldn’t believe I’d made it- he’s still convinced I had bought it! The cheek! I have just struggled to find it again today, as I want to cook it for my lunch! I will save it to my comp now, for fear of loosing it again!

Gorgeous… really tasty, I also added some cumin seeds while the onions were cooking and put 1/2tsp chilli in later on and it tasted spot on.
This is a yummy recipe!!! easy and quick, can’t go wrong. Just to give it more flovour, I fried some ground coriander with the onions, really tasty!!
