Butternut Squash, Sweet Potato & Chilli Soup Recipe
Creamy, tasty & comes with a kick!
Ingredients
1 x Butternut Squash, peeled & cubed
4 x Sweet Potatoes, peeled & cubed
Vegetable Stock cube
Quarter of a teaspoon of Chilli powder
Method
Put your stock into boiling water, add your butternut squash and sweet potatoes. Leave to boil until soft. Once the vegetables are ready, drain the stock from the pan into a bowl-mash the butternut squash & sweet potato-adding as much stock as you like (dependant on your liking of consistency). Add the chilli, again to the liking of your taste buds! You can serve this immediately with warm crusty bread with a good helping of butter or freeze in batches.
