Braised Duck Legs With Spiced Pears, Sultanas and Raisins

Ingredients

4 Duck legs
50g Duck fat or vegetable oil
75g Whitworths extra fancy pears sliced
1 Small onion sliced
2g Mixed spice
25g Whitworths sultanas
25g Whitworths raisins
1 Stock cube
200mls Water
150mls Orange juice
15mls Red wine vinegar

Method

1. Place the oil into a large pan & colour the duck legs until golden, remove from the pan.

2. Put in the sliced pears, onion & mixed spice, cook slowly until the onions are soft.

3. Add the water, stock cube, vinegar & orange juice then bring to the boil, add the sultanas, raisins & duck legs & cover.

4. Place into the oven at 170*c/325*f/gas mark 3 & cook for 1 ½ -2 hours until the duck is soft.

Preparation time: 30 mins
Cooking time: 90 mins
