I have two girls, aged 8 and 11 who are both pretty fussy with their food, especially when it comes to vegetables! Can anyone suggest a dish which has all the goodness they need but the good stuff, vegies etc seems….hidden!? Sneaky I know but it is all for the greater good

My pleasure Paul. Just to add, my favourite Cypriot restaurant put slices on cooked potato in the bottom of the moussaka, then build the rest of the layers up with the aubergine. I love this dish, and like a good Chilli it always seems to taste better the next day

Before cooking the aubergine slices, place them on a tray and sprinkle liberally with salt. Leave to stand for 10 minutes. This draws out the insipid water from the aubergine, and will improve the flavour and colour once fried. Rinse the salt/water off before frying.
