Prawns with Garlic & Chilli Recipe

Ingredients

  • 400g green prawn meat
  • 2 birdseye chillis, finely chopped
  • 4 large cloves of garlic, finely chopped
  • 400 mls pouring cream
  • 2 tbsp butter
  • 1 tbsp brandy
  • salt & pepper

  • Method

    1. Meat a large frying pan on medium heat and melt butter until foaming
    2. Fry garlic for a minute or so, making sure it doesn't brown
    3. Add chilli and fry for a further minute
    4. Mix in the raw prawns and toss until pink and no longer translucent
    5. Add the brandy and stir for a couple of seconds
    6. Nexyt, add in the cream and simmer for 1 minute
    7. Add the salt and pepper to taste

    serve with plain rice or loads of crusty bread
